Asian Chicken Soup
This Asian Chicken Soup is another simple soup recipe. You can substitute the chicken with turkey if you like.
Feel free to add and substitute your favorite vegetable to this soup - bean sprouts, sugar snap peas or Napa Cabbage - the more the merrier.
This soup can be served with rice or rice noodles.
Asian Chicken Soup
INGREDIENTS:
- 2 cups sliced fresh mushrooms, such as shiitake or button
- 1-1/2 cups sliced bok choy
- 1 medium onion, chopped
- 2 medium carrots, cut into bite-size strips (1 cup)
- 1 pound skinless, boneless chicken breast halves or turkey breast tenderloins, cut into 1-inch pieces
- 2 (14-1/2 ounce) cans reduced-sodium chicken broth
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon toasted sesame oil (optional)
- 4 cloves garlic, minced
- 2 teaspoons grated fresh ginger
DIRECTIONS:
- Combine mushrooms, bok choy, onion, and carrots in the slow cooker or crockpot.
- Add turkey or chicken to cooker.
- Combine chicken broth, soy sauce, sesame oil (if desired), garlic, and ginger.
- Pour over vegetables and turkey.
- Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
- Serve over rice or rice noodles.
