Beef and Bean Burrito Recipe

Beef and Bean Burrito Recipe
INGREDIENTS:
- 1 (2-pound) London broil
- 1 (1.25-ounce) package taco seasoning mix
- 1 cup chopped onion
- 1 tablespoon white vinegar
- 1 (4.5-ounce) can chopped green chiles
- salt and pepper for seasoning
- 1 (16-ounce) can refried beans
- 1 jalapeno, finely diced (optional)
- 12 (8-inch) flour tortillas
- 1 1/2 cups (6 ounces) shredded Monterey Jack cheese
- 1 1/2 cups chopped plum tomato
- 3/4 cup sour cream
Additional ingredients for burritos:
DIRECTIONS:
- Trim fat from meat.
- Season with some salt and pepper.
- Rub seasoning mix over both sides of meat.
- Place meat in the slow cooker or crockpot.
- Add onion, vinegar and green chiles.
- Cover and cook on LOW for 9 hours or on high for 4 to 5 hours.
- Remove meat from slow cooker or crockpot.
- Reserve cooking liquid.
- Shred meat with two forks.
- Combine meat and reserved cooking liquid; stir well.
- Warm beans and tortillas according to package directions.
