Beef and Bok Choy Recipe
Beef and Bok Choy make a good combination in this Asian inspired recipe. If you don't like Bok Choy, just substitute it with either spinach or Napa Cabbage.
This is best with noodles, either rice or egg noodles will be great to soak up the flavors of the soup.
Beef and Bok Choy Recipe
INGREDIENTS:
- 1 3/4 cups water
- 3/4 cup low-salt beef broth
- 1/3 cup rice vinegar
- 1/3 cup low-sodium soy sauce
- 2 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1 tablespoon vegetable oil
- 1.5 pound beef stew meat, cut into bite-sized pieces
- 1 1/4 cups chopped green onions
- 1 garlic clove, minced
- 1 teaspoon minced peeled fresh ginger
- 2 cups thinly sliced bok choy (or spinach or Napa Cabbage)
- 1 1/2 cups sliced carrot
- salt for seasoning
DIRECTIONS:
- Season beef with some salt.
- Heat vegetable oil in the slow cooker pot or a large Dutch oven over medium-high heat.
- Add beef and brown all sides.
- Combine first 6 ingredients, stirring with a whisk.
- Add broth mixture, green onions, garlic, ginger and carrots.
- Bring to a boil.
- Cover and cook on low for 5 to 6 hours or on High for 3 to 4 hours or until beef is tender.
- Stir in bok choy and cook over medium heat on the stove for 5 minutes or until tender.
- Serve beef mixture over rice or egg noodles.
