Rice Pudding Recipe

You can make this rice pudding recipe from leftover rice or cook about 1/2 cup of rice to make this dessert.

The recipe calls for bourbon or rum but if you do not have those or want an alcohol-free dessert, you can substitute about 2 to 3 teaspoons of vanilla extract or 3 tablespoons of apple juice.

  1. Warm the milk and pour it over the rice.
  2. Add the sugar, vanilla, raisins, and lemon rind with the eggs and beat till well-blended.
  3. Stir the milk and rice into the egg mixture.
  4. Pour into the slow cooker.
  5. Sprinkle with nutmeg and dot with butter.
  6. Cover and cook on Low for 4 to 6 hours.
  7. Turn into a serving bowl and stir in the bourbon.
  8. Serve the pudding lukewarm with a dollop of sweetened whipped cream on top.
