Rice Pudding Recipe
You can make this rice pudding recipe from leftover rice or cook about 1/2 cup of rice to make this dessert.
The recipe calls for bourbon or rum but if you do not have those or want an alcohol-free dessert, you can substitute about 2 to 3 teaspoons of vanilla extract or 3 tablespoons of apple juice.
Rice Pudding Recipe
INGREDIENTS:
- 3 1/2 cup Milk
- 1 cup Cooked White Rice
- 3 Eggs, slightly beaten
- 1/3 cup Sugar
- 2 teaspoon Vanilla
- 1/2 cup Golden Raisins
- 1 1/2 teaspoon grated Lemon Rind
- 1 teaspoon Nutmeg
- 2 tablespoon Butter
- 3 tablespoon Bourbon OR Dark Rum
- 1/2 cup Sweetened Whipped Cream
DIRECTIONS:
- Warm the milk and pour it over the rice.
- Add the sugar, vanilla, raisins, and lemon rind with the eggs and beat till well-blended.
- Stir the milk and rice into the egg mixture.
- Pour into the slow cooker.
- Sprinkle with nutmeg and dot with butter.
- Cover and cook on Low for 4 to 6 hours.
- Turn into a serving bowl and stir in the bourbon.
- Serve the pudding lukewarm with a dollop of sweetened whipped cream on top.
